Earlier last week, I made Phyllo-wrapped salmon with red wine sauce and let me tell you....it was to die for!  I really love salmon and this is now my new favorite recipe.  Here is the link if you wish to try it:  http://today.msnbc.msn.com/id/38209718/ns/today-foodwine/ .  Since I only needed a few sheets of phyllo dough, I had plenty left over to make something else.  I didn't want to buy a whole bunch of ingredients just to use the phyllo dough, so I did a Google search for phyllo dough recipes and looked for one that I had all of the ingredients for, which turned out to be Banana Chocolate Strudel (http://www.epicurious.com/recipes/food/views/Banana-Chocolate-Strudel-105621). 

 

Now if you've never worked with Phyllo dough, it can be kind of tricky.  Once you use it a couple of times, it does get easier.  This recipe was scrumptious and tasted just like a banana split :)

 

For those of you who don't know, I am enrolled at a photography class at the local community college and go every Wednesday night for 4 weeks.  It has been a blast and I've really learned a lot about my camera.  I can't wait to use the knowledge I've learned and apply it to taking great pics of my family :)

It's been hot here again, so Allison and I have spent some time playing in the sprinkler outside to keep cool.  Here is a pic of her having fun in the water:
